Description

A refreshing pasta salad with Italian herbs, perfect for picnics or as a side dish.


Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, whisk together olive oil, red wine vinegar, oregano, basil, garlic powder, salt, and black pepper.
  3. Add cooked pasta, cherry tomatoes, black olives, red onion, and parsley to the bowl. Toss to coat evenly.
  4. Sprinkle Parmesan cheese on top before serving.
