A refreshing pasta salad with Italian herbs, perfect for picnics or as a side dish.
Ingredients

- 8 oz pasta (penne or fusilli)
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, whisk together olive oil, red wine vinegar, oregano, basil, garlic powder, salt, and black pepper.
- Add cooked pasta, cherry tomatoes, black olives, red onion, and parsley to the bowl. Toss to coat evenly.
- Sprinkle Parmesan cheese on top before serving.
Notes
- Chill for at least 1 hour for better flavor.
- Add grilled chicken for a protein boost.
