Description
Peach crumb bars are a simple dessert with a buttery crust, juicy peach filling, and a crunchy crumb topping. You can enjoy them warm or at room temperature.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg, beaten
- 4 cups fresh peaches, peeled and sliced
- 2 tablespoons lemon juice
- 1/2 cup granulated sugar (for filling)
- 1/4 cup cornstarch
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix flour, 1 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender until the mixture looks like coarse crumbs.
- Stir in the beaten egg until the dough comes together. Press half of the dough evenly into the prepared pan.
- In another bowl, combine peaches, lemon juice, 1/2 cup sugar, cornstarch, and cinnamon. Spread the peach mixture over the crust.
- Crumble the remaining dough over the peach layer.
- Bake for 35 to 40 minutes, until the top is golden brown and the filling is bubbly.
- Let cool completely before cutting into bars.
Notes
- You can use frozen peaches if fresh ones are not available. Thaw and drain them first.
- Store leftover bars in an airtight container in the refrigerator for up to 4 days.
- Serve with vanilla ice cream for extra flavor.
