Description

These peanut chicken meatballs are savory and nutty. They make a great main dish or appetizer. You can serve them with rice or a dipping sauce.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup creamy peanut butter
  • 1/4 cup gluten-free breadcrumbs
  • 1 egg, beaten
  • 2 tablespoons soy sauce (or tamari)
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, peanut butter, breadcrumbs, egg, soy sauce, ginger, garlic, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 16 meatballs, about 1.5 inches each.
  4. Place meatballs on the prepared baking sheet. Bake for 18-20 minutes until cooked through and golden.
  5. Let cool for 2 minutes before serving.

Notes

  • You can substitute almond butter for peanut butter.
  • For extra heat, add 1/2 teaspoon red pepper flakes.
  • Store leftovers in the fridge for up to 3 days.
