Description
These peanut chicken meatballs are savory and nutty. They make a great main dish or appetizer. You can serve them with rice or a dipping sauce.

- 1 pound ground chicken
- 1/2 cup creamy peanut butter
- 1/4 cup gluten-free breadcrumbs
- 1 egg, beaten
- 2 tablespoons soy sauce (or tamari)
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, peanut butter, breadcrumbs, egg, soy sauce, ginger, garlic, salt, and pepper. Mix until well combined.
- Shape the mixture into 16 meatballs, about 1.5 inches each.
- Place meatballs on the prepared baking sheet. Bake for 18-20 minutes until cooked through and golden.
- Let cool for 2 minutes before serving.
Notes
- You can substitute almond butter for peanut butter.
- For extra heat, add 1/2 teaspoon red pepper flakes.
- Store leftovers in the fridge for up to 3 days.
