A moist and tender quick bread made with fresh pears. Perfect for breakfast or a snack.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced ripe pears (about 2 medium pears)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, beat sugar, oil, eggs, and vanilla until smooth.
- Stir the dry ingredients into the wet mixture until just combined.
- Fold in the diced pears.
- Pour batter into the prepared pan and spread evenly.
- Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use ripe but firm pears for best texture.
- You can add 1/2 cup chopped walnuts or pecans if desired.
- Store bread wrapped in plastic at room temperature for up to 3 days.
