Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced ripe pears (about 2 medium pears)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a large bowl, beat sugar, oil, eggs, and vanilla until smooth.
  4. Stir the dry ingredients into the wet mixture until just combined.
  5. Fold in the diced pears.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use ripe but firm pears for best texture.
  • You can add 1/2 cup chopped walnuts or pecans if desired.
  • Store bread wrapped in plastic at room temperature for up to 3 days.
