- 1 lb boneless chicken breast, cubed
- 1 cup fresh pineapple chunks
- 1 red bell pepper, sliced
- 1/2 cup red onion, diced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Heat olive oil in a pan over medium heat.
- Add chicken and cook until browned, about 5-6 minutes.
- Add garlic, bell pepper, and red onion. Cook for 3 minutes.
- Stir in pineapple, soy sauce, honey, black pepper, and red pepper flakes. Cook for 2 more minutes.
- Serve warm over rice or quinoa.
Notes
- Swap honey for maple syrup if preferred.
- For extra crunch, add cashews or peanuts.
- Adjust spice level by adding more or less red pepper flakes.
