Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Mix soy sauce, honey, olive oil, garlic, ginger, and black pepper in a bowl.
  3. Add chicken cubes to the marinade and refrigerate for at least 1 hour.
  4. Thread marinated chicken and pineapple chunks alternately onto skewers.
  5. Preheat grill to medium-high heat and lightly oil the grates.
  6. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
