- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes if using.
- Mix soy sauce, honey, olive oil, garlic, ginger, and black pepper in a bowl.
- Add chicken cubes to the marinade and refrigerate for at least 1 hour.
- Thread marinated chicken and pineapple chunks alternately onto skewers.
- Preheat grill to medium-high heat and lightly oil the grates.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
Notes
- For extra flavor, brush skewers with leftover marinade while grilling.
- If using wooden skewers, soak them longer to prevent burning.
- Serve over rice or with a fresh salad.
