This creamy potato soup is simple to make and perfect for a cozy meal. You use basic ingredients and no meat or alcohol.

- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup milk (or plant-based milk)
- 2 tablespoons butter (or olive oil)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/4 cup shredded cheddar cheese (optional, for topping)
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic. Cook for 3 minutes until softened.
- Add diced potatoes, vegetable broth, salt, pepper, and thyme.
- Bring to a boil. Reduce heat and simmer for 15 minutes until potatoes are tender.
- Use an immersion blender to puree the soup until smooth. Or mash with a potato masher for a chunkier texture.
- Stir in milk and heat through for 2 minutes.
- Ladle into bowls. Top with cheese if you like.
Notes
- For a thicker soup, mash more potatoes. For thinner soup, add extra broth.
- You can substitute milk with heavy cream for extra richness.
