Description

A healthy and delicious breakfast option made with pumpkin and oats, perfect for fall mornings.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1 cup milk (any type)
  • 1 egg
  • 1 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix all ingredients in a bowl until well combined.
  3. Pour mixture into a greased baking dish.
  4. Bake for 25-30 minutes until set.
  5. Let cool slightly before serving.

Notes

  • Can be made ahead and reheated.
  • Top with yogurt or nuts if desired.
  • Store leftovers in the fridge for up to 3 days.
