- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1/3 cup water
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, mix granulated sugar, brown sugar, and oil until combined.
- Beat in eggs one at a time, then stir in pumpkin puree and water.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted into center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- You can substitute pumpkin pie spice for the individual spices.
- Add 1/2 cup of chopped nuts or chocolate chips for extra texture.
