Ingredients
Scale
- 4 thick slices brioche bread
- 3 large eggs
- 1/2 cup milk
- 1/3 cup pumpkin puree
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Pinch of salt
- 2 tablespoons butter for cooking
Instructions
- In a shallow bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt.
- Heat a large skillet or griddle over medium heat. Add butter and let it melt.
- Dip each brioche slice into the egg mixture, letting it soak for 10 seconds on each side.
- Place soaked bread in the hot skillet. Cook 2-3 minutes per side until golden brown and cooked through.
- Serve immediately with maple syrup, powdered sugar, or fresh fruit.
Notes
- Use day-old brioche for better texture. Fresh brioche may become too soggy.
- Adjust spice quantities to your taste.
- For a dairy-free version, use plant-based milk and vegan butter.
