Description

This recipe combines the rich flavors of pumpkin and brioche for a decadent French toast. It is perfect for fall mornings or holiday brunch.

Ingredients

Scale
  • 4 thick slices brioche bread
  • 3 large eggs
  • 1/2 cup milk
  • 1/3 cup pumpkin puree
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 2 tablespoons butter for cooking

Instructions

  1. In a shallow bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt.
  2. Heat a large skillet or griddle over medium heat. Add butter and let it melt.
  3. Dip each brioche slice into the egg mixture, letting it soak for 10 seconds on each side.
  4. Place soaked bread in the hot skillet. Cook 2-3 minutes per side until golden brown and cooked through.
  5. Serve immediately with maple syrup, powdered sugar, or fresh fruit.

Notes

  • Use day-old brioche for better texture. Fresh brioche may become too soggy.
  • Adjust spice quantities to your taste.
  • For a dairy-free version, use plant-based milk and vegan butter.
