These pumpkin cheesecake bars have a creamy filling and a crunchy streusel topping. They are easy to make and perfect for fall.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup pumpkin puree
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup cold butter, cubed
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9×13-inch pan.
- Bake for 10 minutes. Let cool.
- Beat cream cheese and 1 cup sugar until smooth.
- Add pumpkin, eggs, vanilla, and pumpkin pie spice. Mix well.
- Pour filling over crust.
- Mix flour, brown sugar, and cold butter with a fork until crumbly. Stir in pecans.
- Sprinkle streusel over filling.
- Bake for 40 to 45 minutes until set.
- Cool completely. Refrigerate for at least 2 hours before cutting.
Notes
- Store leftovers in the refrigerator.
- You can use walnuts instead of pecans.
