- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 1/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together pumpkin puree, heavy cream, sugar, eggs, vanilla, cinnamon, nutmeg, and salt.
- Pour the mixture into four small ramekins.
- Place the ramekins in a baking dish. Fill the dish with hot water until it reaches halfway up the ramekins.
- Bake for 35 to 40 minutes. The custard is done when it is set but still jiggles slightly.
- Remove from the oven and let cool. Refrigerate for at least 2 hours before serving.
Notes
- Use plain pumpkin puree, not pumpkin pie filling.
- You can substitute heavy cream with half-and-half for a lighter custard.
- Serve chilled with a dollop of whipped cream.
