A chewy oatmeal cookie packed with dark chocolate chips and pumpkin puree.

- 1 cup pumpkin puree
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 3 cups old-fashioned oats
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, cream together pumpkin puree, butter, and brown sugar until smooth.
- Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Stir in oats and dark chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheet, spacing 2 inches apart.
- Bake for 12 to 14 minutes, until edges are golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- Dough can be refrigerated for 30 minutes for less spread.
- Store cookies in an airtight container for up to 5 days.
