Description
This pumpkin french toast is a fall breakfast. You soak bread in a spiced pumpkin batter. Then you pan-fry it until golden. Serve with maple syrup.

- 8 slices thick bread
- 4 large eggs
- 1 cup milk
- 1/2 cup pumpkin puree
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 2 tablespoons butter for cooking
Instructions
- In a shallow dish, whisk eggs, milk, pumpkin puree, brown sugar, vanilla, pumpkin pie spice, and salt.
- Heat a griddle or large skillet over medium heat. Add butter and let it melt.
- Dip each bread slice into the pumpkin mixture. Let it soak for 10 seconds per side.
- Place the soaked bread on the hot griddle. Cook for 3 minutes per side until golden brown.
- Repeat with the remaining slices. Add more butter to the pan as needed.
- Serve warm with maple syrup.
Notes
- Use thick sliced bread or brioche for best results.
- Do not soak the bread too long. It will become soggy and fall apart.
- You can use gluten free bread for a gluten free version.
- For extra flavor, add a pinch of nutmeg to the batter.
