Description

This pumpkin french toast is a fall breakfast. You soak bread in a spiced pumpkin batter. Then you pan-fry it until golden. Serve with maple syrup.


Ingredients

  • 8 slices thick bread
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons butter for cooking

Instructions

  1. In a shallow dish, whisk eggs, milk, pumpkin puree, brown sugar, vanilla, pumpkin pie spice, and salt.
  2. Heat a griddle or large skillet over medium heat. Add butter and let it melt.
  3. Dip each bread slice into the pumpkin mixture. Let it soak for 10 seconds per side.
  4. Place the soaked bread on the hot griddle. Cook for 3 minutes per side until golden brown.
  5. Repeat with the remaining slices. Add more butter to the pan as needed.
  6. Serve warm with maple syrup.

Notes

  • Use thick sliced bread or brioche for best results.
  • Do not soak the bread too long. It will become soggy and fall apart.
  • You can use gluten free bread for a gluten free version.
  • For extra flavor, add a pinch of nutmeg to the batter.
