- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/4 cup molasses
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, mix pumpkin puree, brown sugar, oil, molasses, eggs, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can use whole wheat flour for a heartier texture.
- Store muffins in an airtight container at room temperature for up to 3 days.
