Description

No-bake pumpkin cookies combine oats, pumpkin, and warm spices for a quick treat. You mix the ingredients on the stovetop, then drop spoonfuls onto wax paper to set.


Ingredients

  • 1/2 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. Line a baking sheet with wax paper or parchment paper.
  2. In a medium saucepan, combine butter, pumpkin puree, sugar, and milk.
  3. Bring the mixture to a boil over medium heat, stirring constantly.
  4. Let it boil for 1 minute without stirring.
  5. Remove from heat. Stir in vanilla, oats, pumpkin pie spice, and salt.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet.
  7. Let the cookies cool and set at room temperature for about 30 minutes.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling.
