Instructions
- Line a baking sheet with wax paper or parchment paper.
- In a medium saucepan, combine butter, pumpkin puree, sugar, and milk.
- Bring the mixture to a boil over medium heat, stirring constantly.
- Let it boil for 1 minute without stirring.
- Remove from heat. Stir in vanilla, oats, pumpkin pie spice, and salt.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let the cookies cool and set at room temperature for about 30 minutes.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- Quick-cooking oats work best for texture.
