Description
This one-pan meal combines tender orzo, savory chicken sausage, and creamy pumpkin sauce. It is quick and easy for a weeknight dinner.

- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo
- 1 cup pumpkin puree
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced chicken sausage. Cook until browned, about 5 minutes. Remove from skillet and set aside.
- In the same skillet, add onion and garlic. Cook until soft, about 3 minutes.
- Stir in orzo. Cook for 1 minute.
- Add pumpkin puree, chicken broth, salt, pepper, and nutmeg. Bring to a boil.
- Reduce heat to low. Cover and simmer until orzo is tender, about 10 minutes.
- Stir in heavy cream and cooked sausage. Cook for 2 more minutes.
- Serve hot, garnished with fresh parsley.
Notes
- You can substitute chicken broth with vegetable broth for a vegetarian version.
- Use turkey sausage for a lower fat option.
