- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 8 ounces pasta of your choice
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute.
- Stir in pumpkin puree, heavy cream, salt, pepper, and nutmeg. Simmer for 5 minutes.
- Add Parmesan cheese and stir until melted.
- Toss cooked pasta with the sauce. Serve immediately.
Notes
- Use canned pumpkin puree, not pumpkin pie filling.
- For a thinner sauce, add a splash of pasta water.
- You can substitute heavy cream with half-and-half.
