Description

A warm and comforting breakfast that tastes like pumpkin pie. Baked oatmeal with pumpkin puree and warm spices.


Ingredients

Scale
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1 1/2 cups milk (dairy or plant-based)
  • 1/3 cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, mix oats, baking powder, pumpkin pie spice, and salt.
  3. In another bowl, whisk pumpkin puree, milk, maple syrup, egg, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir until combined.
  5. Transfer mixture to the prepared baking dish. Sprinkle pecans on top if using.
  6. Bake for 25 to 30 minutes, until set and lightly golden.
  7. Let cool for 5 minutes before serving.

Notes

  • You can use any milk you like.
  • Replace egg with a flax egg for a vegan version.
  • Store leftovers in the fridge for up to 4 days.
