A warm and comforting breakfast that tastes like pumpkin pie. Baked oatmeal with pumpkin puree and warm spices.
Ingredients

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1 1/2 cups milk (dairy or plant-based)
- 1/3 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a large bowl, mix oats, baking powder, pumpkin pie spice, and salt.
- In another bowl, whisk pumpkin puree, milk, maple syrup, egg, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients. Stir until combined.
- Transfer mixture to the prepared baking dish. Sprinkle pecans on top if using.
- Bake for 25 to 30 minutes, until set and lightly golden.
- Let cool for 5 minutes before serving.
Notes
- You can use any milk you like.
- Replace egg with a flax egg for a vegan version.
- Store leftovers in the fridge for up to 4 days.
