Description
Pumpkin seed energy bites are no-bake snacks. They combine pumpkin seeds, oats, dates, and nut butter. You can make them in minutes. They give you energy for the day.
Ingredients

- 1 cup pumpkin seeds
- 1 cup rolled oats
- 1/2 cup pitted dates
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Place pumpkin seeds in a food processor. Pulse until coarsely ground.
- Add oats, dates, almond butter, maple syrup, vanilla, and salt. Process until mixture sticks together.
- Roll into 1-inch balls. Use your hands to press firmly.
- Place on a baking sheet lined with parchment paper. Refrigerate for 30 minutes to set.
Notes
- Store in an airtight container in the fridge for up to one week.
- You can substitute sunflower seeds for pumpkin seeds.
- Add chocolate chips or dried fruit for variety.
