Description

Pumpkin seed energy bites are no-bake snacks. They combine pumpkin seeds, oats, dates, and nut butter. You can make them in minutes. They give you energy for the day.


Ingredients

Scale
  • 1 cup pumpkin seeds
  • 1 cup rolled oats
  • 1/2 cup pitted dates
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Place pumpkin seeds in a food processor. Pulse until coarsely ground.
  2. Add oats, dates, almond butter, maple syrup, vanilla, and salt. Process until mixture sticks together.
  3. Roll into 1-inch balls. Use your hands to press firmly.
  4. Place on a baking sheet lined with parchment paper. Refrigerate for 30 minutes to set.

  • Store in an airtight container in the fridge for up to one week.
  • You can substitute sunflower seeds for pumpkin seeds.
