Delicious cookies combining pumpkin flavor with classic s’mores ingredients.
Ingredients

- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup graham cracker crumbs
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Cream butter and sugars together.
- Add egg, vanilla, and pumpkin puree.
- Mix dry ingredients separately.
- Combine wet and dry ingredients.
- Fold in graham cracker crumbs.
- Drop spoonfuls of dough onto baking sheet.
- Bake for 10 minutes.
- Add marshmallows and chocolate chips.
- Bake for 3 more minutes.
Notes
- Store in airtight container.
- Best served warm.
- Dough can be refrigerated for up to 2 days.
