- 1 teaspoon baking soda
- 1/2 teaspoon salt

- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup pumpkin puree
- 1/2 cup strong brewed coffee, cooled
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In a large bowl, beat granulated sugar, brown sugar, and eggs until smooth.
- Add oil, pumpkin puree, coffee, and vanilla. Mix until combined.
- Gradually add the dry ingredients to the wet mixture. Stir just until no flour streaks remain.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Use freshly brewed coffee for the best flavor.
- You can substitute decaf coffee if you prefer less caffeine.
- Store the bread in an airtight container at room temperature for up to 3 days.
