- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup low-sodium chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground turkey. Cook until browned, breaking it apart.
- Stir in onion, garlic, and bell pepper. Cook for 5 minutes.
- Add pumpkin puree, diced tomatoes, kidney beans, and chicken broth.
- Mix in chili powder, cumin, smoked paprika, salt, and pepper.
- Bring to a boil. Reduce heat to low. Simmer for 20 minutes.
- Taste and adjust seasoning. Serve hot.
Notes
- You can substitute ground chicken or beef for turkey.
- For a thicker chili, simmer longer without the lid.
- Store leftovers in the fridge for up to 4 days.
