Description
These pumpkin turkey meatballs are served over zucchini noodles for a healthy, low-carb meal. They are packed with fall flavors and are easy to prepare.

- 1 pound ground turkey
- 1/2 cup pumpkin puree
- 1/4 cup breadcrumbs
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 medium zucchinis, spiralized
- 1 tablespoon olive oil
- 1/2 cup marinara sauce (optional)
Instructions
- In a large bowl, mix ground turkey, pumpkin puree, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until combined.
- Shape the mixture into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 10-12 minutes, turning occasionally, until browned and cooked through.
- Remove meatballs from skillet. Add spiralized zucchini noodles to the same skillet and sauté for 2-3 minutes until tender.
- Serve meatballs over zucchini noodles. Top with marinara sauce if desired.
Notes
- You can use gluten-free breadcrumbs for a gluten-free version.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
