Ingredients

- 1 cup pumpkin puree
- 1 cup grated zucchini
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup vegetable oil
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk oil, brown sugar, eggs, and vanilla.
- Stir in pumpkin puree and grated zucchini.
- Combine wet and dry ingredients. Mix until just combined.
- Pour batter into the loaf pan. Bake for 50-60 minutes.
- Let cool before slicing.
Notes
- Drain excess moisture from zucchini before adding.
- Store in an airtight container for up to 3 days.
