Description
You roast mini sweet peppers until tender, then fill them with a creamy goat cheese mixture. This appetizer is quick and colorful.

- 12 mini sweet peppers
- 4 oz goat cheese, softened
- 2 oz cream cheese, softened
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh chives, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Cut each pepper in half lengthwise. Remove seeds and membranes.
- Toss pepper halves with olive oil and a pinch of salt.
- Place peppers cut side up on a baking sheet.
- Roast for 10 minutes until slightly softened.
- Mix goat cheese, cream cheese, garlic, chives, salt, and pepper in a bowl.
- Spoon the cheese mixture into each pepper half.
- Return to oven and bake for 5 more minutes until cheese is warm.
- Serve immediately.
Notes
- You can use any color of mini sweet peppers.
- For extra flavor, add a pinch of red pepper flakes.
- These are best served fresh from the oven.
