Description

You roast mini sweet peppers until tender, then fill them with a creamy goat cheese mixture. This appetizer is quick and colorful.


Ingredients

Scale
  • 12 mini sweet peppers
  • 4 oz goat cheese, softened
  • 2 oz cream cheese, softened
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Cut each pepper in half lengthwise. Remove seeds and membranes.
  3. Toss pepper halves with olive oil and a pinch of salt.
  4. Place peppers cut side up on a baking sheet.
  5. Roast for 10 minutes until slightly softened.
  6. Mix goat cheese, cream cheese, garlic, chives, salt, and pepper in a bowl.
  7. Spoon the cheese mixture into each pepper half.
  8. Return to oven and bake for 5 more minutes until cheese is warm.
  9. Serve immediately.

Notes

  • You can use any color of mini sweet peppers.
  • For extra flavor, add a pinch of red pepper flakes.
  • These are best served fresh from the oven.
