Description

Ingredients

  • 2 pounds ripe tomatoes, halved
  • 4 cloves garlic, peeled
  • 1 medium onion, quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups vegetable broth
  • 1/2 cup heavy cream (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Place tomatoes, garlic, and onion on a baking sheet. Drizzle with olive oil. Sprinkle with salt, pepper, basil, and oregano. Toss to coat.
  3. Roast for 30 minutes until tomatoes are soft and slightly charred.
  4. Transfer roasted vegetables to a blender. Add vegetable broth. Blend until smooth.
  5. Pour soup into a pot. Warm over medium heat. Stir in heavy cream if using. Adjust seasoning.
  6. Serve hot.
