Description

This salted caramel apple crumble cake combines soft apple cake, sweet caramel, and crunchy crumble topping. You get a balance of flavors and textures in every bite.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 cups diced apples (about 2 medium apples)
  • 1/2 cup salted caramel sauce (store-bought or homemade)
  • For crumble: 1/2 cup all-purpose flour, 1/4 cup brown sugar, 1/4 cup cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk flour, baking powder, baking soda, and salt.
  5. Alternately add flour mixture and buttermilk to the butter mixture, starting and ending with flour. Mix until just combined.
  6. Fold in diced apples.
  7. Pour half the batter into the prepared pan. Drizzle half the salted caramel sauce over the batter.
  8. Pour remaining batter on top, then drizzle remaining caramel sauce.
  9. Make crumble: In a small bowl, mix flour and brown sugar. Cut in cold butter until mixture resembles coarse crumbs. Sprinkle over cake batter.
  10. Bake for 40-45 minutes, until a toothpick inserted in center comes out clean.
  11. Let cool in pan for 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

  • Use Granny Smith or Honeycrisp apples for best texture.
  • You can make your own salted caramel sauce: cook 1 cup sugar until amber, stir in 6 tablespoons butter and 1/2 cup heavy cream, add 1 teaspoon sea salt.
