Ingredients

  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. In a large bowl, mix pumpkin puree, chopped spinach, oats, eggs, cheddar, Parmesan, garlic powder, onion powder, salt, and pepper until well combined.
  2. Let the mixture rest for 5 minutes so the oats absorb moisture.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Scoop about 2 tablespoons of the mixture per cake and flatten into a patty.
  5. Cook for 3-4 minutes per side until golden brown and cooked through.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm.
