- 4 salmon fillets (6 oz each)
- 1/4 cup pesto
- 1 lb baby potatoes, halved
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lemon, sliced
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, and pepper. Spread on a sheet pan.
- Roast potatoes for 15 minutes.
- Add salmon fillets to the pan. Spread pesto over each fillet.
- Scatter tomatoes and lemon slices around the salmon.
- Bake for 12-15 minutes until salmon flakes easily.
- Serve immediately.

- Use store-bought or homemade pesto.
