- 2 tablespoons granulated sugar

Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Whisk flour, baking soda, cream of tartar, and salt in a bowl.
- Cream butter and 3/4 cup sugar until light and fluffy. Beat in egg and vanilla.
- Mix in dry ingredients until just combined. Fold in diced apple.
- Combine 2 tablespoons sugar and cinnamon in a small bowl.
- Shape dough into 1-inch balls. Roll each ball in cinnamon sugar mixture.
- Place balls 2 inches apart on prepared sheets. Bake for 10-12 minutes.
- Cool on sheets for 5 minutes, then transfer to wire racks.
Notes
- Use a firm apple like Granny Smith for best texture.
- Chill dough for 30 minutes if too sticky to handle.
- Store cookies in an airtight container for up to 5 days.
