Description

A quick and easy vegetable fried rice packed with flavor and ready in minutes. Perfect for using leftover rice and veggies.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat oil in a pan over medium-high heat.
  2. Add garlic and sauté for 30 seconds.
  3. Add mixed vegetables and stir-fry for 2 minutes.
  4. Push veggies to one side, pour beaten eggs on the other side, and scramble.
  5. Mix eggs with veggies, then add cooked rice.
  6. Stir in soy sauce and sesame oil.
  7. Cook for 2-3 minutes, stirring constantly.
  8. Season with salt and pepper.
  9. Serve hot.
