Ingredients

- 2 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium-high heat.
- Add garlic and sauté for 30 seconds.
- Add mixed vegetables and stir-fry for 2 minutes.
- Push veggies to one side, pour beaten eggs on the other side, and scramble.
- Mix eggs with veggies, then add cooked rice.
- Stir in soy sauce and sesame oil.
- Cook for 2-3 minutes, stirring constantly.
- Season with salt and pepper.
- Serve hot.

- Use cold, day-old rice for best texture.
- Add protein like tofu or chicken if desired.
