- 6 large eggs
- 1 cup milk

- 1/4 teaspoon black pepper
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup diced onion
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a pan over medium heat. Sauté onions until soft, about 5 minutes.
- In a large bowl, whisk eggs, milk, salt, and pepper.
- Stir in spinach, feta, and sautéed onions.
- Pour mixture into a greased baking dish.
- Bake for 35-40 minutes or until set and lightly golden on top.
