Ingredients

- 2 medium sweet potatoes, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 large eggs
- 1 cup milk
- 1 cup crumbled goat cheese
- 2 cups fresh spinach, chopped
- 1/2 cup chopped onion
- 2 cloves garlic, minced
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, toss sweet potato slices with olive oil, salt, and pepper.
- Press sweet potato slices into a greased 9-inch pie dish to form a crust. Bake for 10 minutes.
- In a skillet, sauté onion and garlic until soft. Add spinach and cook until wilted. Let cool.
- In a bowl, whisk eggs and milk. Stir in goat cheese, spinach mixture, salt, and pepper.
- Pour egg mixture into the pre-baked crust.
- Bake for 35-40 minutes until set and golden.
- Let cool for 5 minutes before slicing.
Notes
- You can substitute goat cheese with feta or ricotta.
- For a dairy-free version, use plant-based milk and omit cheese.
