Description

A savory quiche with a sweet potato crust, filled with spinach and creamy goat cheese. Perfect for breakfast or brunch.


Ingredients

Scale
  • 2 medium sweet potatoes, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 large eggs
  • 1 cup milk
  • 1 cup crumbled goat cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, toss sweet potato slices with olive oil, salt, and pepper.
  3. Press sweet potato slices into a greased 9-inch pie dish to form a crust. Bake for 10 minutes.
  4. In a skillet, sauté onion and garlic until soft. Add spinach and cook until wilted. Let cool.
  5. In a bowl, whisk eggs and milk. Stir in goat cheese, spinach mixture, salt, and pepper.
  6. Pour egg mixture into the pre-baked crust.
  7. Bake for 35-40 minutes until set and golden.
  8. Let cool for 5 minutes before slicing.

Notes

  • You can substitute goat cheese with feta or ricotta.
  • For a dairy-free version, use plant-based milk and omit cheese.
