Sweet Potato Blondies are a delicious and healthy dessert option, combining the natural sweetness of sweet potatoes with a rich, chewy texture. Perfect for any occasion.


Ingredients

Scale
  • 1 cup mashed sweet potato
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix the mashed sweet potato, almond butter, maple syrup, and vanilla extract.
  3. Add the almond flour, baking soda, and salt to the wet ingredients and mix until well combined.
  4. Fold in the dark chocolate chips.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before cutting into squares.
