- 4 cups mashed sweet potatoes
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 cup rolled oats
- 1/2 cup chopped pecans
- 1/4 cup brown sugar
- 1/4 cup butter, cold, cubed
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix mashed sweet potatoes, milk, melted butter, 1/2 cup brown sugar, eggs, vanilla, and salt until smooth.
- Pour the mixture into a greased 9×13-inch baking dish.
- In a separate bowl, combine flour, oats, pecans, and 1/4 cup brown sugar.
- Cut in cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
- Sprinkle the streusel evenly over the sweet potato mixture.
- Bake for 40 to 45 minutes, until the topping is golden and the filling is set.
- Let it cool for 10 minutes before serving.
Notes
- You can use canned sweet potatoes if fresh are not available.
- For a dairy-free version, substitute milk with almond milk and use vegan butter.
- Toast the pecans first for extra flavor.
