Ingredients

  • 4 cups mashed sweet potatoes
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1/4 cup butter, cold, cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix mashed sweet potatoes, milk, melted butter, 1/2 cup brown sugar, eggs, vanilla, and salt until smooth.
  3. Pour the mixture into a greased 9×13-inch baking dish.
  4. In a separate bowl, combine flour, oats, pecans, and 1/4 cup brown sugar.
  5. Cut in cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
  6. Sprinkle the streusel evenly over the sweet potato mixture.
  7. Bake for 40 to 45 minutes, until the topping is golden and the filling is set.
  8. Let it cool for 10 minutes before serving.

Notes

  • You can use canned sweet potatoes if fresh are not available.
  • For a dairy-free version, substitute milk with almond milk and use vegan butter.
