These Sweet Potato Crème Brûlée Bars combine a buttery crust with a creamy sweet potato filling. They are topped with a caramelized sugar layer. The result is a rich, sweet dessert with a satisfying crack.

- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup cold butter, cubed
- 2 cups mashed sweet potatoes (about 2 medium)
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- Make the crust. Mix flour and powdered sugar in a bowl. Cut in cold butter until crumbly. Press into the pan. Bake for 15 minutes.
- Prepare the filling. Whisk together mashed sweet potatoes, heavy cream, 1/2 cup sugar, eggs, vanilla, and salt. Pour over the crust.
- Bake for 30-35 minutes, until the filling is set. Cool completely in the pan. Refrigerate for at least 2 hours.
- Just before serving, sprinkle the top with 1/4 cup sugar. Use a kitchen torch to caramelize the sugar until golden brown.
Notes
- You can substitute canned sweet potato puree. Make sure it is not sweetened.
- Chill the bars well before torching. This prevents the filling from melting.
- If you don’t have a kitchen torch, place the bars under a broiler for 1-2 minutes. Watch closely to avoid burning.
