Ingredients

- 1 cup mashed sweet potato (about 1 medium sweet potato)
- 1.5 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 tablespoons olive oil
- 1/4 cup warm water (as needed)
Instructions
- Boil or bake the sweet potato until tender. Mash and let cool.
- In a bowl, mix flour, salt, and baking powder.
- Add mashed sweet potato and olive oil. Mix until crumbly.
- Add warm water gradually and knead into a smooth dough. Cover and rest for 10 minutes.
- Divide dough into 8 equal balls. Roll each into a thin circle on a floured surface.
- Heat a dry skillet over medium-high heat. Cook each tortilla for 1-2 minutes per side until lightly browned and puffed.
- Keep cooked tortillas wrapped in a clean towel to stay soft.
Notes
- You can substitute gluten-free flour if needed.
- Add spices like cumin or chili powder for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
