Description
A quick and easy pasta salad with taco flavors. Perfect for a light lunch or side dish.
Ingredients

- 8 oz pasta (rotini or penne)
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup corn kernels
- 1/2 cup red onion, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup salsa
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning to beef with water as per packet instructions. Simmer for 5 minutes.
- In a large bowl, combine cooked pasta, beef, tomatoes, olives, corn, and onion.
- Mix sour cream and salsa in a small bowl. Pour over pasta mixture and toss to coat.
- Stir in cheese. Chill for at least 30 minutes before serving.
Notes
- Use gluten-free pasta if needed.
- For extra spice, add jalapeños.
- Substitute ground turkey for a lighter option.
- Best served cold.
