- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Heat olive oil in a skillet over medium heat.
- Cook ground beef until browned, then add taco seasoning.
- Stir in rice, black beans, corn, and diced tomatoes.
- Fill each bell pepper with the mixture.
- Place peppers in a baking dish and top with shredded cheese.
- Bake for 20-25 minutes until peppers are tender.
- Garnish with cilantro before serving.
Notes
- Use any color bell pepper for variety.
- Substitute ground beef with turkey or tofu for a lighter option.
- Add jalapeños for extra heat.
