Description

This recipe combines leftover turkey and cranberry sauce in a crispy quesadilla. It is a quick and easy way to use holiday leftovers. The sweet and savory flavors work well together.


Ingredients

  • 1 cup leftover cooked turkey, shredded
  • 1/2 cup leftover cranberry sauce
  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons butter, softened

Instructions

  1. Spread cranberry sauce evenly over two tortillas.
  2. Divide turkey and mozzarella cheese between the two tortillas.
  3. Top with the remaining tortillas to form two quesadillas.
  4. Butter the outside of each quesadilla.
  5. Heat a large skillet over medium heat.
  6. Cook each quesadilla for 2-3 minutes per side, until golden brown and cheese melts.
  7. Cut into wedges and serve warm.

Notes

  • Use any cheese you prefer.
  • Add leftover stuffing for extra flavor.
  • Serve with sour cream or extra cranberry sauce.
