- 1 cup breadcrumbs
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix breadcrumbs, cranberries, parsley, thyme, salt, and pepper.
- Cut a pocket into each chicken breast. Stuff with the breadcrumb mixture.
- Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken breasts for 3 minutes per side until golden.
- Add chicken broth to the skillet.
- Transfer skillet to oven. Bake for 20 minutes or until chicken reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
