Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, cranberries, parsley, thyme, salt, and pepper.
  3. Cut a pocket into each chicken breast. Stuff with the breadcrumb mixture.
  4. Secure with toothpicks if needed.

  7. Add chicken broth to the skillet.
