Description
A simple tomato soup made with fresh tomatoes and basic pantry ingredients. This recipe is vegan and free of alcohol, bacon, and ham.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 6 large ripe tomatoes, chopped
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil leaves, chopped (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute.
- Add chopped tomatoes, vegetable broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in basil if using. Serve hot.
Notes
- For a creamier soup, add 1/2 cup coconut milk or cashew cream.
- Adjust salt and pepper to taste.
- Store leftovers in the refrigerator for up to 4 days.
