Juicy turkey meatballs simmered in a creamy pumpkin sage sauce. This one-pan meal is perfect for a cozy fall dinner.

- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup pumpkin puree
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1 tablespoon fresh sage leaves, chopped (for garnish)
Instructions
- In a large bowl, mix ground turkey, breadcrumbs, egg, Parmesan, garlic, onion, dried sage, salt, and pepper. Form into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 6 minutes. Remove meatballs and set aside.
- In the same skillet, add pumpkin puree, chicken broth, and heavy cream. Stir and bring to a simmer.
- Return meatballs to the skillet. Cover and cook for 10 minutes, or until meatballs are cooked through.
- Garnish with fresh sage before serving.
Notes
- Use fresh sage for the best flavor. Substitute dried sage if needed.
- Make sure breadcrumbs are gluten-free if you need a gluten-free version.
- Leftovers keep well in the fridge for up to 3 days.
