Description

A quick one-pan meal with ground turkey, sweet potatoes, and cranberries. It is savory with a hint of sweetness. Perfect for a weeknight dinner.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium sweet potato, peeled and diced
  • 1/2 cup dried cranberries
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until soft, about 3 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add ground turkey. Cook until browned, breaking it up with a spoon.
  5. Stir in sweet potato, cranberries, thyme, salt, and pepper.
  6. Pour in broth. Bring to a simmer.
  7. Cover and cook for 15 minutes, until sweet potato is tender.
  8. Uncover and cook for 5 more minutes to thicken.
  9. Serve hot.

Notes

  • Use fresh cranberries instead of dried for a tart flavor.
  • Swap chicken broth for vegetable broth to keep it vegetarian.
  • Store leftovers in an airtight container for up to 3 days.
