- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium sweet potato, peeled and diced
- 1/2 cup dried cranberries
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until soft, about 3 minutes.
- Add garlic and cook for 1 minute.
- Add ground turkey. Cook until browned, breaking it up with a spoon.
- Stir in sweet potato, cranberries, thyme, salt, and pepper.
- Pour in broth. Bring to a simmer.
- Cover and cook for 15 minutes, until sweet potato is tender.
- Uncover and cook for 5 more minutes to thicken.
- Serve hot.
Notes
- Use fresh cranberries instead of dried for a tart flavor.
- Swap chicken broth for vegetable broth to keep it vegetarian.
- Store leftovers in an airtight container for up to 3 days.
