Description
Soft and chewy cookies with a vibrant purple color. They are coated in powdered sugar for a crinkled look. These cookies are inspired by ube, a purple yam from the Philippines.

- 1 cup ube halaya (mashed purple yam)
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ube extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for coating
Instructions
- In a large bowl, cream together butter and granulated sugar until light and fluffy.
- Add egg, vanilla extract, ube extract, and ube halaya. Mix until combined.
- In a separate bowl, whisk flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients. Mix until a soft dough forms.
- Cover dough and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop tablespoon-sized portions of dough. Roll into balls.
- Roll each ball in powdered sugar until fully coated.
- Place on baking sheets, 2 inches apart.
- Bake for 10 to 12 minutes until edges are set. Centers will look soft.
- Cool on baking sheets for 5 minutes, then transfer to a wire rack.
Notes
- Chill the dough well to prevent spreading.
- Ube extract adds color and flavor. Adjust if needed.
- Store cookies in an airtight container for up to 5 days.
