- 1 cup unsalted butter, cold and cubed
- 1/2 cup ice water
- 2 large apples, peeled and diced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Mix flour and salt in a large bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add ice water gradually, stirring until dough forms.
- Shape dough into a disc, wrap in plastic, and refrigerate for 30 minutes.
- Combine apples, brown sugar, cinnamon, nutmeg, and lemon juice in a bowl.
- Preheat oven to 375°F (190°C).
- Roll out dough on a floured surface to 1/8-inch thickness.
- Cut circles using a 4-inch round cutter.
- Place a spoonful of apple mixture on one half of each circle.
- Fold dough over and press edges with a fork to seal.
- Brush tops with beaten egg.
- Bake for 20-25 minutes until golden brown.
- Let cool on a wire rack.
- Whisk powdered sugar, milk, and vanilla for glaze.
- Drizzle glaze over cooled pies.

- Use firm apples like Granny Smith for best results.
- Keep dough cold for flaky texture.
- You can freeze unbaked pies for later.
