- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Pound chicken breasts to an even thickness.
- Season with salt and pepper, then dredge in flour.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 4-5 minutes per side until golden brown.
- Remove chicken from skillet and set aside.
- Add butter, chicken broth, lemon juice, and capers to the skillet.
- Simmer for 3 minutes until slightly reduced.
- Return chicken to skillet, coat with sauce, and cook for 1 minute.
- Garnish with parsley before serving.
Notes
- Use fresh lemon juice for best flavor.
- Adjust salt if capers are very salty.
