Description

  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup ice water
  • 6 cups peeled and sliced apples (Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cubed (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix 2 1/2 cups flour and salt. Cut in 1 cup cold butter until mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, until dough holds together. Press into a 9-inch pie dish. Chill for 15 minutes.
  3. In another bowl, combine sliced apples, granulated sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice. Toss to coat. Set aside.
  4. For the crumb topping, mix 1 cup flour and brown sugar. Cut in 1/2 cup cold butter until crumbly.
  5. Pour apple filling into the chilled crust. Sprinkle crumb topping evenly over the apples.
  6. Place pie on a baking sheet to catch drips. Bake for 45 to 55 minutes, until topping is golden and filling is bubbly. If topping browns too quickly, cover loosely with foil.
  7. Cool on a wire rack for at least 2 hours before serving.
