These pumpkin pie crumble bars combine a buttery crust, a creamy pumpkin filling, and a crunchy oat topping. They are a simple dessert for fall.

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup cold butter, cubed
- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1/4 cup all-purpose flour (for crumble)
- 1/4 cup cold butter, cubed (for crumble)
Instructions
- Preheat your oven to 350°F. Line a 9×9 inch baking pan with parchment paper.
- Make the crust: Mix flour and granulated sugar. Cut in butter until crumbly. Press firmly into the pan.
- Bake the crust for 15 minutes. Let it cool slightly.
- Make the filling: Whisk pumpkin puree, eggs, brown sugar, pumpkin pie spice, and salt until smooth. Pour over the crust.
- Make the crumble: Combine oats, flour, and brown sugar. Cut in butter until clumpy. Sprinkle over the filling.
- Bake for 30 to 35 minutes, until the filling is set and the crumble is golden. Cool completely before cutting into bars.
Notes
- Use canned pumpkin puree, not pumpkin pie mix.
- You can substitute gluten-free flour if needed.
- Store bars in the refrigerator for up to 5 days.
